Although, in fact, there are several versions of this sauce (so we could speak of several drunken sauces), they all have the common characteristic that they are made with an alcoholic beverage: white pulque, reposado tequila or clear beer, hence its name. . In addition, it usually has garlic, onion, tomato (green or red) and some type of chili (cuaresmeño or xalapeño, pasilla, serrano or green, guajillo, chipotle, habanero, morita ...) to provide pungency to the sauce. Some recipes also include finely chopped cilantro, orange juice, and / or olive oil. Other recipes include peaches (peaches). In Guanajuato it is usually added xoconostle (also called prickly pear or higochumbo).
To make this sauce, the ingredients are roasted on a grill or comal and then they are crushed in a molcajete (ideally) or, failing that, they are removed in a blender. It is served alone with tortilla chips, cheese and / or avocado, or as a side, for example, for a Mexican barbecue.
